Just like a well-investigated claim, a great meal requires attention to detail and a passion for uncovering the best flavors. Here are some of my favorite Mediterranean recipes:

Greek Salad

  • 4 large tomatoes, cut into wedges
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 green bell pepper, sliced
  • 1 cup Kalamata olives
  • 200g feta cheese, cubed
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine tomatoes, cucumber, red onion, and green bell pepper.
  2. Add olives and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over the salad and toss gently to combine.
  5. Serve immediately and enjoy!

Hummus

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 1 clove garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp ground cumin
  • Salt to taste
  • 2-3 tbsp water
  • Paprika and fresh parsley for garnish

Instructions

  1. In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, and cumin.
  2. Process until smooth, adding water as needed to reach desired consistency.
  3. Season with salt to taste.
  4. Transfer to a serving bowl and garnish with paprika and fresh parsley.
  5. Serve with pita bread, vegetables, or as a spread.

Grilled Lemon Herb Chicken

  • 4 boneless, skinless chicken breasts
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.
  2. Add chicken breasts to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  5. Let rest for 5 minutes before serving.
