Introduction

Just like a well-investigated claim, a great meal requires attention to detail and a passion for uncovering the best flavors. Here are some of my favorite Mediterranean recipes:
Greek Salad
- 4 large tomatoes, cut into wedges
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1 green bell pepper, sliced
- 1 cup Kalamata olives
- 200g feta cheese, cubed
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine tomatoes, cucumber, red onion, and green bell pepper.
- Add olives and feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently to combine.
- Serve immediately and enjoy!
Hummus
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1 clove garlic, minced
- 2 tbsp extra virgin olive oil
- 1/2 tsp ground cumin
- Salt to taste
- 2-3 tbsp water
- Paprika and fresh parsley for garnish
Instructions
- In a food processor, combine chickpeas, tahini, lemon juice, garlic, olive oil, and cumin.
- Process until smooth, adding water as needed to reach desired consistency.
- Season with salt to taste.
- Transfer to a serving bowl and garnish with paprika and fresh parsley.
- Serve with pita bread, vegetables, or as a spread.
Grilled Lemon Herb Chicken
- 4 boneless, skinless chicken breasts
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tbsp chopped fresh rosemary
- 1 tbsp chopped fresh thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.
- Add chicken breasts to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
